In June we are hosting a reception for
my daughter and her soon to be husband.
She's not a big cake fan, in fact,
at her wedding next week, we are having
cheesecake from the Cheesecake Factory.
But I did convince her to let me make
cupcakes for the June party, my specialty.
We decided on 4 different flavors,
S'mores,
Key Lime
Chocolate Salted Caramel
but one
I had never made before.
So I needed to test the recipe.
Both Elizabeth and
her husband work in medical science experiential labs
and that seemed the perfect place to
offer up our test results.
These people are scientist and should be able
to apply their diagnostic skills to evaluate
these Pina Colada Cupcakes.
I used one recipe for the Pineapple cake and
another one for the Coconut Rum Cream Cheese frosting.
The results:
The perfect blend of coconut, pineapple and rum!
These scientist know about cupcakes.

ReplyDeleteI have been watching the tv show "My Big Fat Gypsy Wedding". One week, the cake maker showed that their elaborate cakes are sometimes fake because the weight would be too much to be able to actually create. Then they serve cake from smaller size cakes.
I like coconut - I could volunteer to be a taste tester!
